Dough
- 2/3 cup unsalted butter, browned ( 150 g )
- 1/4 cup white sugar ( 50 g )
- 1/2 cup brown sugar ( 100 g )
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour ( 270 g )
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup milk chocolate chips ( 100 g )
Filling
- 1/4 cup brown sugar ( 50 g )
- 1 tsp cocoa powder
- 1 tbsp ground cinnamon
- 1 tbsp melted butter
Brown the butter and let it cool slightly.
Mix butter with white and brown sugar until smooth.
Add egg, egg yolk, and vanilla. Mix well.
Add dry ingredients and mix into dough, then fold in chocolate chips.
Chill dough for 1 hour.
Mix filling ingredients and spread over rolled dough.
Roll, freeze, then slice into cookies.
Bake at 180°C for 13–15 minutes until golden.
