For the Cookie Dough:
- 1/2 cup unsalted butter, softened ( 115 g )
- 1/2 cup brown sugar ( 100 g )
- 1/4 cup granulated sugar ( 50 g )
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour ( 300 g )
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/3 cup milk chocolate chips ( 60 g )
- 1 cup freeze-dried strawberries, crushed ( 30 g )
For the Strawberry Cream Cheese Filling:
- 2/3 cup cream cheese ( 150 g )
- 3 1/4 tbsp powdered sugar ( 25 g )
- 1 tbsp heavy cream
- 1/2 tsp vanilla extract
- 1 1/2 tbsp strawberry powder ( 10 g )
For the Pistachio Chocolate Filling:
- Pistachio chocolatecut into small cubes
Prepare the strawberry cream cheese filling by mixing cream cheese and powdered sugar until smooth. Add heavy cream, vanilla, and strawberry powder, then mix until creamy. Freeze in small scoops until firm.
Shape pistachio chocolate into small pieces and freeze until solid.
In a bowl, cream butter, brown sugar, and white sugar until fluffy.
Add egg and vanilla, then mix well.
Add flour, baking powder, baking soda, and salt. Mix until dough forms.
Fold in chocolate chips and crushed strawberries. Chill dough for 1 hour.
Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
Scoop dough into balls and place on tray.
Fill each dough ball with frozen strawberry cream cheese and pistachio chocolate, then seal well.
Bake for 10–12 minutes until edges are golden. Let cool before serving
