Ingredients
  

  • 2 1/4 cups ground almonds ( 225 g )
  • 1/4 cup peanut butter ( 60 g )
  • 1/4 cup honey ( 80 g )
  • 1/4 cup desiccated coconut ( 60 g )
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 1/4 cups milk chocolate chips or chopped milk chocolate ( 200 g )

Instructions
 

  • Add the ground almonds, peanut butter, honey, coconut, vanilla, and salt to a large bowl. Mix until a soft dough forms.
  • Check the texture of the mixture. It should feel soft and slightly sticky but easy to press together.
  • Fold the chocolate chips into the dough until evenly combined.
  • Line a rectangular pan with parchment paper and transfer the mixture into the pan.
  • Press the mixture down firmly using a spoon or spatula until the surface is smooth and even.
  • Place the pan in the refrigerator to chill while preparing the chocolate topping.
  • Melt the milk chocolate in the microwave in short intervals, stirring until smooth. Pour it over the chilled cookie layer and spread evenly.
  • Freeze the bars for 15–20 minutes until firm. Remove from the pan, slice into squares, and sprinkle with coarse salt if desired.
