Mixing bowl
Rectangular baking pan
Parchment paper
- 2 1/4 cups ground almonds ( 225 g )
- 1/4 cup peanut butter ( 60 g )
- 1/4 cup honey ( 80 g )
- 1/4 cup desiccated coconut ( 60 g )
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 1/4 cups milk chocolate chips or chopped milk chocolate ( 200 g )
Add the ground almonds, peanut butter, honey, coconut, vanilla, and salt to a large bowl. Mix until a soft dough forms.
Check the texture of the mixture. It should feel soft and slightly sticky but easy to press together.
Fold the chocolate chips into the dough until evenly combined.
Line a rectangular pan with parchment paper and transfer the mixture into the pan.
Press the mixture down firmly using a spoon or spatula until the surface is smooth and even.
Place the pan in the refrigerator to chill while preparing the chocolate topping.
Melt the milk chocolate in the microwave in short intervals, stirring until smooth. Pour it over the chilled cookie layer and spread evenly.
Freeze the bars for 15–20 minutes until firm. Remove from the pan, slice into squares, and sprinkle with coarse salt if desired.
- Chill the bars before slicing for cleaner cuts.
- Use good-quality chocolate for the best flavor.
- Store in the refrigerator to keep the bars firm and fresh.
- You can replace peanut butter with almond butter or cashew butter
