- 1/2 cup unsalted butter, melted (113 g )
- 1/2 cup brown sugar ( 100 g )
- 1/4 cup granulated sugar ( 50 g )
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup Biscoff spread ( 100 g )
- 1 1/2 cups all-purpose flour ( 180 g )
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/2 cup white chocolate chips ( 100 g )
- Crushed Biscoff biscuits for topping
In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth and creamy.
Add the egg and vanilla extract, then whisk until well combined.
Mix in the Biscoff spread until fully smooth.
In another bowl, combine flour, salt, and baking powder.
Add dry ingredients to the wet mixture and mix gently until a soft dough forms. Do not overmix.
Fold in white chocolate chips .
Spread the dough evenly into a lined baking pan.
Top with crushed Biscoff biscuits and extra white chocolate.
Chill for 30 minutes, then bake at 180°C (356°F) for 20–25 minutes.
Cool slightly, cut into squares, and serve.
