Ingredients
  

  • 1/2 cup unsalted butter, melted (113 g )
  • 1/2 cup brown sugar ( 100 g )
  • 1/4 cup granulated sugar ( 50 g )
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup Biscoff spread ( 100 g )
  • 1 1/2 cups all-purpose flour ( 180 g )
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup white chocolate chips ( 100 g )
  • Crushed Biscoff biscuits for topping

Instructions
 

  • In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth and creamy.
  • Add the egg and vanilla extract, then whisk until well combined.
  • Mix in the Biscoff spread until fully smooth.
  • In another bowl, combine flour, salt, and baking powder.
  • Add dry ingredients to the wet mixture and mix gently until a soft dough forms. Do not overmix.
  • Fold in white chocolate chips .
  • Spread the dough evenly into a lined baking pan.
  • Top with crushed Biscoff biscuits and extra white chocolate.
  • Chill for 30 minutes, then bake at 180°C (356°F) for 20–25 minutes.
  • Cool slightly, cut into squares, and serve.
