- Ingredients – Easy & Soft Butter Cookies
- ⅔ cup Cold Butter (150 g)
- ⅔ cup Powdered sugar – 2/3 cup ( 80 g )
- 2 Egg yolks
- ½ tsp Vanilla extract ( optional )
- a pinch of Salt
- 1¾ cups All-purpose flour (or fine “00” flour) (210 g)
- Jam of choice – for filling
In a bowl, combine the butter and powdered sugar. Mix well until fully combined.
Using an electric mixer, beat the mixture until creamy and smooth.
Add the egg yolks one at a time, mixing well after each addition.
Add the vanilla extract and a pinch of salt.
Gradually add the flour and mix until a soft, smooth dough forms.
Cover the dough and refrigerate for 30 minutes.
Shape the dough into a cylinder, then cut into equal-sized pieces.
Roll each piece into a ball and place on a baking tray lined with parchment paper, leaving space between cookies.
Press the center of each cookie gently with your finger to create an indentation.
Fill each indentation with jam.
Bake in a preheated oven at 180°C (350°F) for 15–20 minutes, until the edges turn lightly golden.

Do not overbake; the cookies should stay pale with lightly golden edges.

Let cookies cool completely before serving so the jam sets properly.
