- ⅔ cup unsalted butter, softened (150 g)
- ⅔ cup powdered sugar (80 g)
- 1 small egg
- ½ tsp vanilla extract
- ¼ tsp almond extract
- ⅓ cup ground almonds (35 g )
- 1⅓ cups all-purpose flour (170 g)
- 2 tbsp cornstarch (20 g )
- A pinch of salt
- Almonds for decoration whole or crushed, optional
Cream softened butter and powdered sugar until smooth.
Add egg, vanilla, and almond extract, then mix until combined.
Fold in ground almonds, flour, cornstarch, and salt until a smooth dough forms.
Pipe or scoop dough onto a parchment-lined baking tray.
Chill cookies in the fridge for 15 minutes to keep their shape.
Decorate with whole or crushed almonds if desired.
Bake in a preheated oven at 180°C (356°F) for 13–15 minutes, until edges are lightly golden.
Let cool slightly before serving and enjoy soft, flavorful almond cookies!
